Basics
Always store roasted beans away from light and air. These two elements will degrade the richness over time.

Roasted beans may take up to a week after roasting to fully develop their flavor. They will be at their prime flavor profile during weeks 2 and 3.
Golden Ratio
Use this information as your own guide to develop your ideal flavor profile. Start with a 1:18 ration. This is the golden standard from the Specialty Coffee Association of America.

This ratio means 55 grams of coffee to 1000ml (grams) of water that is 195-205°f.
​
Esperesso is generally at a 1:3 ratio.

Tips for Brewing

Pour Over
-
Heat water to 200°
-
Grind to sand like consistency
-
Place mug & cone on a scale.
-
Pour twice the amount of water as you have coffee in a swirling motion.

Let soak for 30 secs.
-
Pour the remainder of the ratio of water slowly over the grounds in a circular motion.

French Press
-
Heat water to 200°
-
Grind to sea salt like consistency
-
Place press & grinds on a scale.
-
Pour twice the amount of water as you have coffee & swirl press.
-
Let soak for 30 secs.
-
Pour the remainder of the ratio of water.
-
Plunge half way & pull up.
-
Wait 4 minutes, plunge, & pour.

Siphon
-
Heat water to 200°
-
Grind to sand like consistency
-
Secure filter, add coffee
-
Add water by ratio to bottom globe & heat with full flame.
-
Place top globe with a small gap to let air pass until water begins to boil.
-
Stir top to assure even soaking.
-
Wait for water to leave bottom glass, immediately turn off flame.
